Ingredients for the chicken stock

A dish of Yakhni rice, recipe from Mughal cuisine
  • 2 cups of water per 1 cup of rice. So, to serve six, if you are taking 3 cups of rice, you need 6 cups of water.
  • 12 pieces of chicken
  • 5 cloves
  • 2 sticks of cinnamon
  • 2 bay-leaves
  • 1 tablespoon of black peppercorns

Other ingredients for Yakhni rice
  • 3 cups of rice, washed and kept to drain
  • 3 tablespoons of vegetable oil
  • 2 large onions, chopped
  • 3 tablespoons of ginger-garlic paste
  • 4 green chillies, slit lengthwise
  • 6 potatoes cut into halves


How to cook Yakhni rice at home


In a large microwave-safe bowl, put all the ingredients for the stock.
Place it in the microwave uncovered, and cook for 15 minutes on high power.
Take out of the oven and let it cool. When they are cold, take out the chicken pcs. Keep the stock.

In a frying pan or kadai, heat the oil and fry the potatoes till they are cooked. Now after removing potatoes from kadai, add onions and fry until they are translucent. Add 2 tablespoons of the ginger-garlic paste to it and fry till the raw smell evaporates. Now add the chicken and fry till browning.(on high heat). Add salt to taste. Add the remaining portion of ginger-garlic paste and fry again till the raw smell evaporates. Now add the rice, mix well and fry for 3 minutes. Remove from fire.

How to cook Yakhni rice in a microwave cooker


In the microwave-safe bowl, put the ingredients from Kadai, add chicken stock, fried potatoes, green chillies, and salt to taste and 2 teaspoon full of ghee.
Place this in the microwave, uncovered, on high power for 10 minutes and covered for another 10 minutes. Wait for 4 minutes before opening the lid.

How to cook Yakhni rice in a rice Cooker


Put the ingredients from Kadai, add chicken stock, fried potatoes, green chillies, and salt to taste and 2 teaspoon full of ghee in a rice cooker--and wait till it is done.

How to cook Yakhni rice in a pressure Cooker


Put the ingredients from Kadai, add chicken stock, fried potatoes, green chillies, and salt to taste and 2 teaspoon full of ghee in a pressure cooker without the weight on. Now wait for some time till smoke and water comes out of the weight outlet. When you see the smoke and water coming out; put the weight on. Wait for exactly 5 mins or the 1st whistle, whichever is earlier. Don't forget to switch off the gas. Give a standing time of 8 minutes and open. The first aroma is surely appetizing and mouthwatering. Serve this with cucumber raita.
